My favorite sweets are laced with lemon.  It helps add a completely new dimension and layer of creaminess to the whole dish. Sweetened ricotta with a hint of lemon is whipped into a fluffy cream, piped over crushed amaretti cookies, and topped with fresh blackberries and raspberries.  And now I sort of wish I could re-name the recipe. I found that a whisk attachment on a stand mixer was the easiest way to get this ricotta to be super light and fluffy but if you don’t have one, a hand mixer or a food processor can do the trick. I love the subtlety of the lemon and ricotta in this whipped cream.
